So... last week when I threw all the garbage that was in my head into a post about my life changing and possibly my blog, you all were so very supportive!! I mentioned I was thinking about adding recipes to my blog and I had a number of loyal readers said they would be excited to try my recipes. So I am taking a leap of faith and here it goes.
My mom and dad has some good friends in town visiting and invited us over for a dinner party. I offered to bring an appetizer, but wanted to make something different. I scrolled about Pinterest for a while a came across a feta dip. I had never thought about using feta as a dip. Feta is low in fat {something I am always up for} and it could go with pita chips and veggies.
Here is what you will need
Ingredients
8 oz feta, crumbled {can use fat free also}
1/2 cup skim milk ricotta cheese
1/3 cup EVOO
juice of 1 lemon
1/2 tbsp dried oregano
1/2 tbsp crushed red pepper flakes
2 garlic cloves, smashed
1 roasted red pepper, chopped {jarred, about 4 pieces}
water as needed
Add feta, ricotta, garlic, EVOO, lemon juice, and herbs into a food processor. Blend until smooth. Add water as needed to make smooth. Add roasted red pepper, and blend. I have a very small 3 cup food processor... so I did mine in two batches!
Once all blended pour into a serving bowl and top with 1 tsp of olive oil. Refrigerate until ready to serve. I like to serve mine with pita chips, celery, and carrots.
It was a hit with my parents and their guests!

Sounds so good Tiffany! I'll totally try it. That costco sized Feta container in my fridge needed a purpose other than the occasional pizza or Greek salad. So this rocks!
