Summer Camp... Link Parties and Summer Recipe


Summer Camp is in session over at Cassie's blog!  Today in class we are talking abut link party dos and don't for both hosting and attending.  Cassie has an awesome weekly link party so she pretty much is the expert on this topic!  Head over to see what you should and shouldn't do when attending a party!

I love summer cooking, and think that all food should be kept light and fresh.  Laura from Elegant Nest asked me to share my favorite summer recipe a couple days ago for her Summer Recipe Series.  My recipe for my Summer Corn Salad takes all of the freshest in season ingredients to make a super light and satisfying summer side dish.


Summer Corn Salad
Serves 8-10

- 8-10 ears of corn on the cob 
- 1 pint of grape/cherry tomatoes {halved}
- 1 large red onion {diced}
- bunch of basil {chiffon} 
- apple cider vinegar
-olive oil
- S & P to taste




Shuck corn, trim ends and boil in water for 10 minutes.  You could also place on the grill with brushed with olive oil for a more smoky flavor.  



Meanwhile, sliced tomatoes in half, chop onion, and basil.



To easily cut the corn off the cob, place a smaller bowl upside down in a bigger bowl.  Place corn on the bowl and cut off the kernels.


Add corn to cut veggies.  Add apple cider vinegar {I would say about 1/4-1/2 cup, depending on how tangy you like it} olive oil to coat and salt and pepper to taste.  Mix well.  Refrigerate until ready to serve.

This looks delicious! I have a similar combination (minus the vinegar) that I roast and it's great. I'll have to add this to my summer recipe list.

Definitely going to need to make this! I pretty much devour entire fields of corn during the summer.
